Patent Pending PROBLEM TO BE SOLVED: To obtain a polynucleotide encoding a glycosyltransferase, useful for producing a capsaicin glycoside, a glycosyltransferase encoded by the polynucleotide, a vector containing the polynucleotide, a transformant containing the vector, a recombinant glycosyltransferase produced by the transformant, to provide a method for producing a capsaicin glycoside using the transformant or the recombinant glycosyltransferase, to obtain a capsaicin glycoside obtained by the production method and a fragment of the polynucleotide.
