When should we incorporate?

We are a small team of engineers and software developers based in Lyon, France. We plan to launch a startup based on an idea for a new SaaS product in the field of consumer insurance & finance. We now that we have to incorporate a company, but we would like to postpone this in the exploratory phase, where we develop and test prototypes and determine problems in the business plan and market fit. Is this a good idea? What do you usually tell startups about this?
