Are service providers in marketplaces such as Uber or TaskRabbit employees?

We are creating an innovative marketplace for healthcare services. On the marketplace, healthcare professionals would be matched with customers, while we take a fee either based on individual transactions or a subscription scheme. Given the success of platforms such as oDesk or Uber, what exactly is the employment status of the service providers and what would that mean for us legally and regarding taxes?
