Question

How does it work for IP if someone in the team is part time only? Can we require they don’t also work for a similar competitor company in their contract with us? (We plan to use a standard employment contract but would like to be very strict on this point that they do not disclose information about our product to any other company.)

You can draft a contract however you want and have your employees sign it when they are about to be hired. Terms can vary from non-disclosure while actually working at your company, and may also include provisions as to non-disclosure for a predetermined time after the particular employee leaves the company. Similarly with respect to working for a competitor company.
