Hypothetically, If I was the founder of a popular startup in Australia, would I need to travel to the US to meet with the VC? I assume as much, but what would be a good way to prepare this sort of meeting beforehand?

There is a viable business play in acquiring Australian startups and then relocating them in US for higher multiplier. However, unless you have a significant differentiator or enough traction, the investors in US have more than enough choices in their own backyard. Preparing for investment is no different from than in Australia, there are many incubators/accelerators etc that provide pitching clinics or consultancy services. Face meetings are important as investors like to judge the character of the founder, see the book Think Fast & Slow (on gut instinct).
