Do's and Don'ts in hiring interns

We are a software development startup based in San Diego. We would like to know: What are typical "do's and don'ts" when hiring interns? What exactly are the legal rules? For example, is there an obligation that the intern be paid?

-Do Execute a Confidentiality Agreement and Ownership of any work product.
-Do Limit access to confidential information
-Do restrict outgoing email attachments
-Do insure assignments provide a learning experience.
-Do Meet regularly to insure the internship is productive to intern and company.
-Don't treat intern like a file temp.
