Patent Pending The invention provides methods and systems for generating and maintaining a modified and controlled atmosphere (MA/CA) environment in refrigerated retail and vending displays. The MA/CA environment is capable of safely extending the shelf-life of fresh fish, seafood and preservative free fresh cooked meals, entrees, meat, poultry, bakery for several weeks. MA/CA systems can also be configured to extend the shelf life of fresh fruits and vegetables. Apparatus includes novel fuel cell integrated refrigeration system that serves as the oxygen reduction and control means necessary for maximum shelf life extensions in high CO2 environments for fresh seafood, meats, precooked meals, etc. Fuel cells can also be configured to provide backup power for the retail and vending systems. To illustrate the freshness extending capability of the preservative-free MA/CA technology, fresh sashimi or sushi can be held for periods well in excess of two weeks (e.g. vending on the streets of Tokyo). Another example, case ready meats can be displayed for weeks without the expensive, deep dish packaging currently employed. The technology will eliminate spoilage losses, reduce packaging costs and enable new categories of branded fresh convenience foods. Refrigerated Retail display market alone is estimated at $5.37 billion by 2017.
