Patent Pending In the liver, the enzyme alcohol dehydrogenase oxidizes ethanol into acetaldehyde, which is then further converted into the harmless acetic acid (vinegar) by acetaldehyde dehydrogenase. Acetaldehyde is more toxic than alcohol[citation needed] and is responsible for many hangover symptoms
